Marco Minnucci founded Cascina San Michele in 2010 and farms about eight and a half hectares of native Piedmontese grapes organically, on the principle — his words — that the winemaker guides but doesn't overpower. Slow Wine gave the estate its Chiocciola, the snail it hands producers worth a detour. Barbera is the backbone: Primevì for everyday drinking, La Briccona as the Superiore, with a Brachetto, the Eteronimo white and a Collarisa rosato around them.

Book a visit through the estate and you'll hear how the wines are made — low-intervention, a little wild, bottled without much fuss. Costigliole d'Asti is Barbera's largest single-vineyard commune in Piemonte, and San Michele is a good, quiet place to taste what that gives you.
