Cuvage does one thing — bubbles — and it does them the long way. Since 2011 this Acqui Terme house has made Piemonte's sparkling wines by metodo classico, the second fermentation happening in the bottle the way Champagne does it: Alta Langa DOCG from Pinot Nero and Chardonnay, a Pas Dosé with nothing to hide behind. Alongside it sits the Acquesi line, the softer Charmat-method Brachetto d'Acqui and Asti that the town lends its name to.

Unusually for a serious sparkling producer, they're set up for visitors: a boutique that opened in 2020, a glass pavilion added in 2022, cellar tours and tastings you can book online in Italian or English. Come for the Alta Langa and stay for the Brachetto d'Acqui — the pale-ruby, faintly sweet red that people here pour cold with dessert and everyone underestimates.
