What draws people to Cantine Bosca, a big long-established sparkling-wine house in Canelli, is underground: the 'Cattedrali Sotterranee', kilometres of tufa tunnels running beneath the town and part of the UNESCO-listed heritage of Canelli's cellars, where Classic Method sparkling wines age at a naturally constant temperature. The range is all spumanti — Asti Spumante, traditional-method sparkling wines and Charmat-method bottlings, a rosé among them.
You can only get in on a guided visit, booked in advance. The tour runs about an hour and leans hard into a sound-and-light show projected across the caves before you taste, usually one Classic Method and two Charmat. Opinions split: plenty love the cool, spectacular caves, the family-friendly staging and the English-speaking guides, while others find it more show than substance for a producer working at this volume. Visits run in Italian and English.
