Bagna Cauda Alpina

Why it's special

The Gruppo Alpini of Nizza Monferrato holds it to remember General Franco Cravarezza, and the invitation goes to friends, supporters and anyone in town. You eat the classic garlic-and-anchovy bagna cauda at long tables under the old covered cattle market, with accordionist and singer Sabrina Salvestrin as the guest performer.

Bagna Cauda Alpina is a public lunch at the Foro Boario of Nizza Monferrato, the brick-and-timber former cattle market on Piazza Garibaldi. The town's Alpini group hosts it and the Pro Loco does the cooking. The group holds it in memory of General Franco Cravarezza and opens it to friends, supporters and the rest of the town.

Bagna cauda is the Piedmontese autumn and winter dish: a hot sauce of garlic, anchovies and oil kept warm at the table, with raw and cooked vegetables to dip. Around Nizza the vegetable that matters most is the cardo gobbo, the town's blanched "hunchback" cardoon. After lunch, accordionist and singer Sabrina Salvestrin plays.
