Monferrato agnolotti served four different ways in one sitting, cooked by the same hamlet circolo that runs Tuffo's summer porchetta sagra, with the Robiola di Cocconato among the starters.

Tuffo is a hamlet of Cocconato with its own circolo, the Associazione Circolo Ricreativo THOU, best known for the porchetta of its July patronal sagra. At the end of winter the circolo cooks a single dinner around agnolotti, the small filled pasta of Piedmont.

The meal opens with salami and Robiola di Cocconato, the village's own robiola cheese, then the agnolotti come out four ways: plain, with butter and sage, with the juices of the roast, and with ragù. Dessert, fruit, wine and coffee follow. Places are limited and booking is required; a meat-free version of the agnolotti can be asked for when you book.
