Cisrò d'Aicq — Pro Loco di Acqui Terme

Why it's special

Cisrò is a dish of Acqui's farming past, and this is the one day a year it's cooked in quantity and shared out; the Pro Loco runs it as part of its work keeping the town's traditional foods alive.

Cisrò is what Acqui calls its chickpea soup with pork rind, a dish from the town's farming kitchens, and once a year the Pro Loco di Acqui Terme makes a lot of it. On a Sunday in late October the volunteers start serving at 11:30 in the hall of the Alpini association in Piazza Don Dolermo, and keep going until the pots are empty. You can sit at the tables or take a portion home.

It's a small, local fixture rather than a festival, but it's the one day the soup is made in quantity and handed round. The Pro Loco runs it as one of its traditional-food days; between February and March it does the same with buseca d'Aicq, Acqui-style tripe. Pair it with a walk through Acqui Terme and a look at La Bollente.
